Soft Ginger Molasses Cookies

This recipe makes about 48 cookies.

3/4 cup unsalted butter, cut up, still firm
1 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1/3 cup molasses
1 tablespoon orange juice
2 cups all purpose (does not need to be sifted)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1 teaspoon cocoa powder
1/2 teaspoon allspice
1/3 cup sparkly sugar (I just used granulated)

Preheat oven to 350 degrees F.

Using an electric mixer, beat butter until creamy. Add sugar, 1/4 cup at a time. Continue beating for another minute. Beat in egg, vanilla, orange juice, and molasses.

In a separate bowl, thoroughly stir together the flour, soda, salt and remaining spices. Add the flour mixture to the butter mixture and stir until mixed.

Shape dough into balls approximately 1 inch across. Roll the balls in sparkly (or granulated) sugar. Place 2 inches apart on cookie sheets and bake one sheet at a time on center rack of oven for about 11 minutes.
